Our extraordinary coconut sugar is made by hand through a multi-step process in small villages in Kulon Progo, Indonesia. Tappers climb the tall coconut palm trees and tap the blossom of the flower way up in the tree, and attach a bucket to catch the sweet nectar that drips out.

Once the bucket is full, they hold it and shimmy down the tree, and transport it to homes in the village. There, the nectar is boiled down until it reaches the sugar stage. It's then sifted and ground further until it becomes an ultrafine powder, which retains all the fantastic, rich flavor of the coconut blossom.
