SOURCING

ABOUT LINDERA FARMS

The folks at Lindera Farms do a malolactic fermentation of carmen, ají dulce, Serrano, espelette and fish peppers from Farm Fireside, along with tomato water, garlic and onions, before blending them with their gardener, heirloom pepper and ramp vinegars. That mixture ages for about a year, then they combine it with our garlic and onion powders, oregano buds, purple dulse and sun-dried tomato powder, as well as basil and oregano from their own garden, and our caramelized onion and heirloom pepper vinegars. This brews for another 2 weeks before being blended, resting and then blended again — then it's finally being bottled and ready to use!

Lindera Farms takes locally and sustainably sourced agricultural products of pristine quality and ferments them into wines, which they then age into vinegar. This makes for a robust, versatile vinegar with chefs, bartenders, home cooks and health conscious individuals in mind. Their vinegar-making process is painstakingly hands-on, often starting with foraged ingredients, and the effort and care is evident when you taste this exceptional hot sauce.
