Vegan Caribbean Bay Leaf Rolls

Vegan Caribbean bay leaf butter lends a warm, sweet and complex flavor to these soft yeast rolls.

Ingredients
2 cups (9 ounces) all-purpose flour
3/4 cup almond or oat milk
1/2 cup (1 stick) vegan butter
1 Tbsp sugar

2 tsp ground Caribbean Bay Leaf
1 packet (1/4 ounce) instant yeast
1/2 tsp salt
Directions
Melt the vegan butter with ground bay leaves on medium heat.
Use a large mixing bowl or mixer and combine the flour, sugar, yeast and salt.
Warm the milk and add to the dry mixture.
Pour 1/4 cup of the bay leaf butter into the mixer or bowl and integrate well. Mix the ingredients together well to make a soft dough.
Transfer the dough to a lightly floured surface and knead until it becomes smooth and elastic. Let it rest for 10 minutes.
Grease the baking pan with some of the bay leaf butter in preparation for baking and heat the oven to 375°.
Divide the dough into 12 pieces and shape into balls, and place in the greased pan.
Cover and let the rolls rise in a warm place until it doubles in size, about 30-45 minutes.
Lightly brush the tops of the rolls with some of the remaining bay leaf butter, then bake until puffed and golden brown, about 25 minutes.
Remove from the oven and let the rolls rest for about 5 minutes before serving.
