Ingredients
4 salmon fillets

3 Tbsp Pomegranate Molasses
1 Tbsp soy sauce
1 tsp grated fresh ginger
1 Tbsp olive oil

1 tsp chili flakes (adjust to taste)

Salt and pepper to taste
2 oranges, peeled and diced
1 small red chili, finely chopped or 1 tsp chili flakes
2 Tbsp fresh cilantro, chopped
1 Tbsp red onion, finely chopped

1 Tbsp lime juice or 1 tsp ground black lime

Salt to taste
For the Salsa:
Directions
Preheat the oven to 400° F.
In a small bowl, mix the pomegranate molasses, soy sauce, grated ginger, olive oil, chili flakes, salt and pepper. Brush the salmon fillets generously with this glaze.
Place the salmon on a lined baking sheet and bake for 12-15 minutes, or until the salmon is cooked through and has a nice caramelized finish.
While the salmon is baking, prepare the salsa by combining the diced oranges, chopped chili, cilantro, red onion, lime juice and a pinch of salt in a bowl.
Once the salmon is cooked, serve it topped with the spicy orange salsa.
