Ingredients
2 boneless, skinless chicken breasts (8 oz each)

½ cup all-purpose flour
2 large eggs
1 ½ cups panko bread crumbs
⅓ cup grated Parmesan

1 Tbsp Diavolo seasoning
⅓ cup extra-virgin olive oil
⅓ cup neutral oil (canola or avocado)
Lemon wedges (for serving)
Directions
Prepare chicken: Slice each breast in half horizontally, pound to ⅛-¼ inch thickness.
Season chicken: Salt and pepper (½ tsp, ¼ tsp).
Dredge stations: Flour (shallow bowl), Eggs (beaten), Panko mixture (panko, Parmesan, Diavolo seasoning, salt, pepper).
Dredge chicken: Flour > Egg > Panko mixture.
Heat oils in 12-inch skillet (medium-high). Cook 2 cutlets (2 min/side, until golden).
Repeat: Cook remaining cutlets.
Serve: Hot/warm with lemon wedges.
