Ingredients
2 sticks butter, softened
1/2 cup sugar

2 Tbsp Black Lime Date Sugar OR Pompona Vanilla Date Sugar OR Buffalo Ginger Date Sugar
1 egg yolk
2 cups all-purpose flour
1/2 tsp salt
Directions
Cream the butter and sugar in an electric mixer until combined.
Beat in the egg yolk, then the flour and salt, on low speed until the mixture comes together (this will take a few minutes).
Shape dough into logs, wrap in wax paper, refrigerate at least 2 hours or overnight.
Slice 1/4-inch-thick cookies and bake at 275 for 15-18 minutes.
